I finally got to try the Iceland Catch Atlantic Cod Filets and they did not disappoint! đ

For this recipe, I wanted something with a little more crunch so I ended up making a Pecan crusted version with Israeli CousCous and roasted carrots đ„
Ingredients
Iceland Catch Atlantic Cod Filets
2-3 Carrots - Diagonally Cut
Israeli Cous Cous
2oz Panko Crumbs
1/2oz Chopped Pecans
Lemon Zest and Juice
1tsp Vegetable Stock Concentrate
2tsp Dijon Mustard
2tbs Mayo
2tsp Honey
Garlic
Olive Oil
1tbs Butter
Instructions
CARROTS: Pre-heat oven to 450F. In a baking sheet, toss carrots with olive oil, S&P. Roast for 20 minutes or until browned and tender. Toss with lemon zest.
COUSCOUS: Heat a small pot over medium high. Add 1 tbsp of butter, garlic, and couscous. Cook for 1-2 minutes until lightly toasted and fragrant. Add 3/4 cup of water and stock concentrate. Bring to a boil, reduce to a simmer, cover and cook for approx. 7 minutes.
BREADING: Melt 1tbs of butter, mix in Panko and pecans until coated
SAUCE: Combine honey, mustard, and mayo.
FISH: Pat Fish Filets dry. Season with S&P + seasoning of your choice. Coat with olive oil. Press the Panko mix against the top of the filet. Evenly spread tops with a thin layer of honey mustard sauce. Save the rest for serving. Once carrots are half way cooked, place the fish filet on the other side of the baking sheet and cook for the remaining 10-12 min. or until cod is cooked through.
