Summer Corn Cheesy Grits

These creamy and cheesy grits make the perfect summertime lunch and can be adjusted to feed one or many.

Note: The measurements below are for a single serving.

🌽Corn - canned or boiled on the cob (1/4 cup)

🌽 Grits of your choice. I used quick grits from @quacker (1 serving)

🌽Heavy cream

🌽Belton Farms Double Gloucester Cheese with Onion and Chives - find it at Publix

🌽Truffle Salt




  1. Make your grits as instructed in the box

  2. Set heat to low

  3. Add 1 tablespoon of butter, a splash of heavy cream, corn to taste, truffle salt, pepper, and shredded cheese. Stir until combined.

  4. Serve topped with more cheese and corn. Garnish with fresh chives.

Make this recipe your own base switching up the cheese flavor ( Trader Joe's has great selections!) or adding jalapeños for a spicy kick.
