This Beef Tostada Recipe makes a great weekday meal! They are ready in 20 minutes or less and pack on a ton of flavor.
Ingredients
10-12oz of Ground Beef or Substitute for protein of choice.
6in Corn Tortillas
1/4oz Taco Seasoning
2 Plum Tomatoes - Diced
2oz Sour Cream
Garlic to taste
Extra Virgin Olive Oil
Scallions - Sliced
Instructions
Preheat oven to 425F. Lightly brush tortillas with oil on both sides. Flip halfway and bake until both sides are crispy ~10 min
Dice Tomatoes into small squares. In a bowl, toss with garlic, extra virgin olive oil, salt, and pepper.
Make sour cream drizzle: In a bowl, slowly mix sour cream and 1tsp of water at a time until it reaches a drizzle consistency. Season with Truffle Salt & Pepper.
Heat 2tbsp of oil in a skillet. Add Beef and season with salt & pepper. Break up into smaller pieces. Once browned, add scallion whites, garlic, and taco seasoning. Cook for about 1 minute, and add 1/4 cup of water. Cook until water is almost evaporated and beef is fully cooked.
Divide beef into crispy tortillas, top with tomatoes, sour cream, and scallion greens.
