Quick and Easy Shrimp Burrito Bowl
This shrimp burrito bowl makes a great weeknight meal and packs on a ton of flavor. Scroll down for the recipe 👇
1/2lb of Shrimp
1oz of Scallions
1oz of Sour Cream
5oz of Jasmine rice
1 Can of black beans (15oz)
1.25 cups of water
1️⃣Drain and rinse beans
2️⃣Thin Sour Cream with 1tsp of water at a time until it reaches a drizzle consistency. Season with Salt and Pepper.
3️⃣Toast rice with 2 tablespoon of olive oil, and garlic to taste. Add beans, 2 cups of water, and a pinch of salt. Bring to a boil over high. Simmer covered for about 20 minutes until ready.
4️⃣Pat shrimp dry and season with salt and pepper. Heat 2tbps of olive oil and cook shrimp and chopped scallions until shrimp are pink (2-3 minutes). Add Salsa to shrimp and cook until warm (1 min).
5️⃣Serve over rice, drizzle with sour cream, and top with chopped scallions
