4oz salsa
1/2lb of Shrimp
1oz of Scallions
1oz of Sour Cream
5oz of Jasmine rice
1 Can of black beans (15oz)
1.25 cups of water
Garlic Cloves
đŚINSTRUCTIONSđŚ
1ď¸âŁDrain and rinse beans
2ď¸âŁThin Sour Cream with 1tsp of water at a time until it reaches a drizzle consistency. Season with Salt and Pepper.
3ď¸âŁToast rice with 2 tablespoon of olive oil, and garlic to taste. Add beans, 2 cups of water, and a pinch of salt. Bring to a boil over high. Simmer covered for about 20 minutes until ready.
4ď¸âŁPat shrimp dry and season with salt and pepper. Heat 2tbps of olive oil and cook shrimp and chopped scallions until shrimp are pink (2-3 minutes). Add Salsa to shrimp and cook until warm (1 min).
5ď¸âŁServe over rice, drizzle with sour cream, and top with chopped scallions
