Quick and Easy Caprese Ciabatta
This delicious Caprese Ciabatta makes a great Lunch when you are running low on time.
Optional: Truffle Salt
Heat oven to 450F or broil for a quicker toast (make sure to keep an eye on it). Split Ciabatta rolls down the middle. Brush both sides with olive oil. Toast until golden brown and crispy.
Cut Tomatoes into medium slices. Season with Truffle Salt or salt of choice.
Cut Mozarella into medium slices.
After Ciabbata is toasted, spread mayo and Pesto on both sides. I used a homemade pesto that I love. (Should I share the recipe?)
Add Tomatoes and Mozzarella. Top and cut in half.
